Directions

  • Cut 400g chicken thigh filets into pieces. Marinate in 4 tbsp soy sauce, 1 teaspoon sambal chili paste and 2 garlic cloves finely cut
  • Prepare 400g udon noodles and drain. Mix with 2 tbsp sesame oil
  • Bake the chicken for 7 minutes at 200°C, giving it a shake now and then. Add 150g shiitake mushrooms, 150g button mushrooms, 1 sliced red onion, 150g bean sprouts and 200g samphire (or green asparagus tips) and cook for another 5 minutes. Add the noodles and cook for another 5 mins. Sprinkle with 1 tsp sesame seeds
  • Chef’s tip: It will even be more heart healthy to prepare this dish with low-salt soy sauce.
